Will’s Fresh Pico de Gallo

The first taste test that made Lauren smile
Look, making pico de gallo is not a recipe, it’s a vibe.

Rule #1: If your tomatoes aren’t ripe and juicy, start over. Nobody wants sad pico.
Rule #2: The jalapeños? Adjust based on how bold you’re feeling. This is a choose-your-own-adventure moment.
Rule #3: Lime juice is everything. If you think you’ve added enough, add a little more.
Rule #4: Salt + time = flavor magic. Let it sit for a few minutes before you taste.

“Pico is best enjoyed while standing in the kitchen, stealing chips, and pretending it’s for quality control.”

💡 Pro Tip: If you really want to test your pico, fix a bite-sized chip, hold it up, and offer it to your cooking partner. It’s just science—things taste better when someone else feeds you.(Ask Lauren. She’ll back me up on this.)
  • Ripe tomatoes, diced
  • White onion, finely diced
  • Jalapeños, seeded and minced (adjust to taste)
  • Fresh cilantro, chopped
  • Lime juice
  • Salt and pepper to taste
Mix ingredients in a bowl, squeeze lime juice over top, and add a pinch of salt and pepper. Let the flavors meld while you prep the rest.
