Will’s Famous Game Day Burritos

The perfect pre-game meal that brought Lauren and me together for an afternoon of good music, laughter, and a little taste-testing fun. When you’ve got the perfect sous chef, you gotta show off a little.

The Basics

  • Large flour tortillas
  • Grilled chicken breast (I knew Lauren preferred it to beef, so bonus points for me.)
  • Bell peppers and onions for roasting
  • Fresh lime
  • Your favorite hot sauce
  • Shredded cheese (Mexican blend is elite)
  • Sour cream
  • Fresh cilantro

The Method

Prep the Chicken:

Grill chicken breasts, seasoned simply with salt, pepper, and a touch of lime. Once cooled, shred into bite-sized pieces. Try not to snack on half of it while “testing.”

Roast the Veggies:

“This is where the magic happens,” I always say as the kitchen fills with that incredible aroma.

  • Slice up those bell peppers and onions.
  • Heat a cast-iron skillet until it’s nice and hot.
  • Add a touch of oil—enough to roast, not deep fry.
  • Roast until the edges get that perfect caramelized char (trust me, you’ll know it when you smell it.)

Assembly:

Warm the tortillas slightly (unless you enjoy sadness). Layer with chicken, roasted veggies, cheese, pico de gallo, guacamole, and any other toppings you love.

Pro Tips for Maximum Burrito Awesomeness

Music is essential – Pick something you can both sing along to while you cook. (Bonus: This also increases the chances of impromptu kitchen dancing.)
